Instructions
Preparation of Shrimp
If using raw shrimp, heat 1 tablespoon of butter in a large skillet over medium heat. Add shrimp, season with salt and pepper, and sauté for 2-3 minutes on each side until they turn pink. Remove shrimp from skillet and set aside.
Sauté the Aromatics
In the same skillet, add remaining tablespoon of butter. Once melted, stir in diced onion. Cook for about 2-3 minutes until onion softens. Add minced garlic and sauté for another 30 seconds.
Cook the Vegetables
Add chopped artichoke hearts and sun-dried tomatoes to the skillet. Cook for 2 minutes. Sprinkle in Italian seasoning, dried parsley, and paprika, mixing well.
Make the Sauce
Sprinkle flour over vegetable mixture. Cook for about 1 minute, then gradually pour in heavy whipping cream while stirring. Reduce heat to low and let simmer for 2-3 minutes to thicken.
Add the Spinach
Stir in fresh spinach and let it wilt in the creamy sauce for about 2-3 minutes.
Incorporate the Cheese
Stir in shredded Parmesan cheese until melted completely, forming a rich sauce. Adjust flavor with salt and black pepper.
Finish with Shrimp
If using pre-cooked shrimp, stir them into the sauce to heat through for about 2-3 minutes. If using raw shrimp, add them back and warm for 1-2 minutes.
Serve
Remove skillet from heat and serve immediately, ideal with cauliflower rice or zucchini noodles.
Notes
Store leftovers in an airtight container for 2-3 days. Reheat on the stove over low heat or microwave.
