Instructions
Preparation
Preheat the oven to 325°F (163°C).
In a bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well combined. Press this mixture into the bottom of a 9-inch springform pan.
In a large mixing bowl, beat together the softened cream cheese and sugar until smooth and creamy. Add in the vanilla extract and blend.
Add the eggs one at a time, mixing well after each addition. Make sure everything is fully incorporated.
Stir in the sour cream and ground cinnamon until the mixture is smooth.
Pour the cheesecake filling into the crust and smooth the top with a spatula.
Baking
Bake for about 55-60 minutes or until the center is slightly jiggly but not liquid.
Once baked, turn off the oven and leave the cheesecake in the oven for an hour to cool gradually.
Remove the cheesecake from the oven, let it cool at room temperature, then refrigerate for at least 4 hours or overnight.
Frosting and Topping
For the frosting, beat together the softened butter and cream cheese until fluffy, then gradually add the powdered sugar and mix until smooth. Add vanilla and cinnamon, and mix again.
Spread the cream cheese frosting over the cooled cheesecake.
For the topping, mix sugar and cinnamon in a small bowl. Sprinkle over the frosting.
Serving
Slice and serve chilled.
Notes
Ensure cream cheese is softened to avoid lumps. Refrigerate for at least 4 hours for best results. Variations include adding pumpkin puree or chocolate chips.
